There's a new kind of heat in Mumbai, bold, unapologetic, and full of flavour. Bang Bang! Noodle, the city's first Ma La and Sichuan cuisine-focused noodle bar by Chef Rahul Punjabi, is back with a fresh menu that dives deeper into the spice, soul, and street-style comfort of Sichuan cuisine.



Since opening doors in Goregaon, Bang Bang! Noodle has earned its cult following for dishes that celebrate the tingle, aroma, and addictive chaos of real Sichuan flavours. Now, Chef Rahul turns up the dial with new plates and noodle bowls that are playful, punchy, and packed with the kind of food that makes your chopsticks move faster than you planned.

New Small Plates & Starters


The lineup starts strong with the Vegan Liangpi Cold Noodles, a chewy, chilled mix of wheat starch noodles and gluten balls tossed in Ma La chilli oil and black vinegar, followed by the Smashed Cucumber Salad, a crunchy, cooling medley of cucumbers, peanuts, and garlic tossed in ma la chilli oil and black vinegar that packs a punch of spice and acidity. 



The Crispy Corn & Water Chestnuts Yu Xiang stir-fry brings the perfect balance of sweet, sour, and spicy, while the Chow Chow Chilli Potato is fragrant with hong yo chilli oil, golden garlic, and scallions, adding a familiar but fiery comfort (with a Jain option, too). For umami lovers, the XO Mushrooms deliver a savoury kick in a house-made mushroom X.O. sauce, and the Gong Bao Chicken channels classic Sichuan kung pao energy with dry chillies, cashews.

Chef Rahul also debuts his first batch of in-house alkaline noodles, a step closer to his vision of turning Bang Bang! Noodle into a true "temple of noodles." The Pixian Chilli Alkaline Noodles come smothered in thick, glossy chilli sauce with Chinese greens and mushrooms, while the Chongqing Wan Za Mian pairs thin noodles and spinach with creamy yellow peas, seasoned soy, and a hit of black vinegar. 



For those craving depth and richness, the Xin Jiang Lamb Noodles feature alkaline noodles with a sweet and spicy Mongolian-style lamb sauce that's hearty and bold. For an escape into Southeast Asia, the Bang Bang Laksa Noodles blend chilli guling, lemongrass, and galangal in a lush coconut curry, while the Burmese Khao Suey brings turmeric, cumin, and coriander seed notes to a fragrant coconut broth with all the fixings.
