Following his global reputation in Bangkok, Anand is finally bringing his culinary vision back to India with 'Raga', his first restaurant in the Indian subcontinent. CONCEPT

Raga is a collaboration between Gaggan Anand and his longtime colleague and protege, Rydo Anton. The name itself brings together elements of their names, while also referring to 'Raga', the Indian musical concept associated with melody and mood. Anand believes that Raga will have its own identity, rather than simply replicating his Bangkok restaurant. The experience is centered around creative Indian food, storytelling and a sense of surprise. True to Anand’s style, the idea is less about conventional fine dining and more about giving diners an experience that engages them throughout the meal.

AMBIENCE

The setting plays a central role in Anand's latest venture. Located on Janpath, one of the capital's most prominent addresses, the restaurant occupies two levels. The ground floor features a fully open kitchen and the first floor houses a private dining room, meant for those long due intimate dinners and private social gatherings. The open kitchen is particularly significant because it places the chefs at the centre of the experience. Instead of hiding the culinary process behind closed doors, Raga is designed to let diners see the action unfold. Anand and his team travelled to Japan and worked with artisans to source and create specialized crockery for the restaurant. According to restaurateur Zorawar Kalra, the investment in equipment and craftsmanship was substantial, reflecting the ambition behind the project.

For Raga, the complete beverage programme is still not extensively available online, so specific cocktails and pairings are best left to the restaurant’s current menu.
