Refuge is a new eatery and bar in New Delhi's M Block Market, Greater Kailash 2. It features coffee in the day and cocktails in the night, and serves a purpose to be tranquil and energetic at the same time. The food offers more than varied cultures, is both comforting and surprising, and draws inspiration from migration. The objective is simple: create a comfort zone in which everyone from any background feels welcome.

AMBIENCE


Walking into Refuge is like walking into a comforting cocoon. It created contrast with its walnut paneling, soft ivory walls, and pops of red lacquered upholstery. There are two different levels to the space; the top level wraps around a 42-foot standing cocktail bar, while the bottom level is quieter with an actual kitchen and coffee bar. The metallic highlights get just enough light. The upper level is energized, with trees outside the windows, clinking glasses, and laughter.

Refuge's food takes comfort food and twists it into a taste that is new. With cashew-kaffir lime podi, "Refuge 65" is a playful take on Chicken 65. Black garlic aioli, truffle, and mushrooms in Forager's Croquettas. Pickled cucumber, radish, filo tostadas, truffle ponzu, and chilli crunch are combined in Avocado Crossing. The shellfish and pasta dishes are also well-balanced, delicious, and symbolic of a lively texture that makes them memorable, though not too heavy.

Among the few notable mixes are Refugee's Respite, where gin, licorice syrup, and mango hydrosol are combined; EMBE-RAS, which combines Mahua, Alphonso mango, and basil; Olive Trail, which combines Scotch, fig, & olive oil. Other items, such as Waste Not and Gullah Breeze, are sugar-free, dry, zesty, and fruity. Each drink seems to be designed to delineate a different story.
