Selva is a new dining destination at World St. Worldmark, Aerocity, introduced by first-

generation restaurateur Sarthak Sidana, who is also behind Underdoggs and Sere. While the

restaurant is based in Delhi, its culinary story has travelled much further. The concept took

shape through extensive exploration of Mexico, Peru, Japan and other parts of Asia, where

Sidana and his team spent more than a year studying regional ingredients, cooking techniques

and dining cultures.

Rather than presenting Mexican cuisine through the familiar tacos-and-tequila lens, Selva

creates its own interpretation by bringing together regional Mexican cooking and Japanese-

Peruvian Nikkei influences. The menu consequently moves between Mexican hearth cooking,

seafood-led Peruvian preparations and Japanese techniques, giving the restaurant a distinctly

contemporary identity.

AMBIENCE

The interiors at Selva complement its globally influenced menu with a design that feels

contemporary, warm and understated. Natural materials, timber details, handcrafted textures

and generous spaces give the restaurant an open yet sophisticated character. Rather than

taking the obvious route of covering the space in tropical foliage, the design keeps the

surroundings refined, allowing the food and experience to remain the focus. As evening approaches, the experience extends into Selva Maya, an intimate cocktail space

inspired by Mesoamerican mythology. With softer lighting, curved architectural elements and

a sculptural bar, it offers a more dramatic contrast to the restaurant.

Regional specialities such as Tofu Sashimi, the yellow tail fish Hamachi preparation, sit

alongside Nori Tacos, where seaweed replaces the conventional tortilla. Sushi and Tostadas

bring in Peruvian influences, while house-made tortillas and robata-fired meats and seafood

add depth to the menu. The food focuses on traditional techniques while allowing unfamiliar combinations to take centre stage. This makes the menu particularly interesting for diners who want to explore Mexican cuisine beyond its most recognizable dishes.

The drinks draw from South American ingredients and Mesoamerican influences, incorporating native fruits, Amazonian botanicals, cacao, peppers, herbs and spices. The drinks offered by Selva are Tokya Colada, Kemuri Roots, Jasmine Kaffir Lime and many more. Techniques such as clarification and infusion are used to create cocktails with layered and unusual flavour profiles.With its combinationof Mexican roots, Nikkei influences and a distinctly Delhi setting, Selva offers a dining experience shaped by travel, research and a desire to reinterpret familiar cuisines rather than simply reproduce them.
