The first restaurant from Sanjay Dutt, named Solaire, has now opened at Grand Hyatt Mumbai, located in the BKC region. In September 2025, Dutt stated that this opening was "the first of many." He opened the restaurant with Abhishek Chabria, Amit Lakhyani, and Ishaan Varma. The vision is to be a fine dining, globally inspired cuisine concept with influences from Asian, Mediterranean, Chinese, and contemporary Indian. "I’ve eaten around the world. Now it’s my turn to plate it." Dutt said as he talked about the pitch.

The design is spacious and electrifying. Instead of loud theatrics, the first impression depicts a sophisticated and intimate dining area with ideal lighting. The restaurant uses the existing aesthetic from Grand Hyatt Mumbai in terms of high-class and warm environment. This is a casual dining environment that will allow guests to talk at length and celebrate. The ambience brings out the soft golds, clean lines, and modernistic craft areas worthy of taste and sight for Solaire's fine dining experience.

At Solaire, the menu is structured as a culinary journey around the world. There will be Mediterranean favorites, Chinese spices, Asian tapas, and a fun offering of modern Indian food. Currently, both Pinwheel Ravioli and the whimsical Maharaja Cauli are show-stopping teasers that signify the food will be creative and inventive. It is clear that the kitchen is aiming for balance in providing delicious food that feels warm and familiar for business meals, and innovative enough to intrigue food lovers.

As unique as the food is, the drinks menu is equally fantastic. The bar, focused on mixology, has really nice cocktails. Both The Front Fire and the Saffron Saddle are signature serves, and will probably be a couple of the first standouts from the bar. You can expect a good balance of classic cocktails, some creative infusions, as well as an opportunity to try something completely new and outside the box. Mocktails will also be offered, so while the focus is going to be on cocktails and spirits, everyone will have a reason to still linger at the bar.
