Entering Nobu Dubai, the atmosphere is created by dramatic architecture and perfect lighting. In the middle is the main bar, topped with sculptural copper lighting installations, which fall down the ceiling in curved sheets. These bright lights bounce off the hammered metal surfaces, which give the space a warm amber radiance. The lounge is designed with a geometric wooden ceiling grid that refers to the ancient Japanese lattice constructions and provides the interior with modern depth. Seating made of plush burgundy, marble tables and polished wood finishes provide an intimate and luxurious ambiance. The sushi counter at the center of the dining room features chefs doing delicate knife cuts, including cutting the sashimi with a yanagiba and preparing nigiri, which turns the kitchen into a seat.

In Nobu Dubai, the menu is like a path of discovery, playing with balanced textures and flavors. The culinary philosophy incorporates Japanese precision with Peruvian cuisine, featuring citrus, chilli and herbs. The meal begins with cold dishes featuring finely prepared seafood, such as Yellowtail Jalape, slices of hamachi sliced thin and floating in jalape and citrus soy. Starters like Toro Tartare with Caviar and Lobster Salad with Spicy Lemon Dressing reflect the restaurant's focus on high-quality ingredients. The Tempura items, like Rock Shrimp Tempura with creamy, spicy sauce, make their way to the table, adding crunchy texture and rich flavor. At the end of the experience, there are signature mains such as Black Cod Miso and Chilean Sea Bass Jalapeño Miso in which the deep flavor of umami is emphasized through the use of marinades and grill methods.
