The restaurant was opened by Afsana Verma, Amit Verma, and Dhaval Udeshi, who had a vision of creating a place where food, design, and relaxation come together without being theatrical. The atmosphere in Soraia is characterized by moderation and not overindulgence. The facility has indoor and extensive outdoor areas where people can have their meals, with the option to sit in climate-controlled areas or enjoy nature in the open. One of the most outstanding features is the glasshouse dining hall that can be filled with natural light in the daytime and produces a pleasant ambient atmosphere at night. The furniture and layout are created so that the tables have enough privacy and the conversation is not rushed and personal. The color scheme consists of warm, reddish, neutral and dark brown colors, which are not too heavy but rather warm. The use of lighting is deliberately minimal, and the room feels natural, as opposed to being dramatic.

The Warm Brie Hive and Watermelon Guacamole with puri are some of the popular meals that combine sweetness and richness as well as offer freshness and crunch, respectively. The Lotus Stem Pinsa is unique due to its texture and stratified flavors, and the Jackfruit Berry Pulao is one of the dishes that demonstrates that the kitchen is interested in the connection between fruit, grain, and spice without any heaviness. The desserts, like the Sitafal Tres Leches, offer familiarity and are in line with the ingredient-based approach of the restaurant. Servings are large enough to share but small enough to enable the diner to have a taste of various foods.

It revolves around ingredients, seasonality and transparency of taste as opposed to fancy presentation. Chef Hitesh Shanbhag is the head of the kitchen; he has experience working in Indian luxury hotels and international kitchens. The food does not seek to shock and surprise but rather feels thoughtful and balanced. The Indian flavors are applied with restraint and coupled with the European techniques where suitable. The menu is not loaded with heavy gravies or excessive amounts of spice. This technique renders the food appropriate during long meals without fatigue in the palate.

Soraia also has an Omakase cocktail bar, one of the first of its kind in Mumbai. The guests will have the option of a guided cocktail experience, depending on their preferences, rather than a lengthy menu. The cocktails are inspired by Indian regions, botanicals, and landscapes, and are focused on aroma and balance. There are also classic cocktails that one can enjoy when he/she feels familiar. The bar is not a standalone attraction as it is meant to be a central feature of the restaurant. Alcoholic beverages are served slowly and do not overwhelm the meal. This gives the impression that the bar program is a continuation of the dining experience and not a separate feature.
