Raspberry Tiramisu Vodka

Raspberry Tiramisu with Zarova Vodka


An elegant reinterpretation of the classic tiramisu, in which the freshness of the raspberry replaces the coffee and melds with the creaminess of the mascarpone. A subtle touch of Zarova Vodka adds aromatic cleanliness and enhances the fruit without overpowering, achieving a balanced, fresh, and contemporary dessert.

An elegant reinterpretation of the classic tiramisu, in which the freshness of the raspberry replaces the coffee and melds with the creaminess of the mascarpone. Ingredients (6–8 servings)

  • 6 fresh eggs, separated (yolks and whites)

  • 500 g mascarpone cheese

  • 250 g sugar

  • 300 g savoiardi ladyfingers

  • 300 g fresh raspberries

  • 30–40 ml Zarova Vodka

  • Powdered sugar, as needed

  • Additional fresh raspberries for garnish

Preparation

Mascarpone Cream


  1. Whisking the whites: Beat the egg whites at medium speed until foamy. Gradually add half of the sugar and continue beating until a firm and glossy meringue is achieved. Keep chilled.

  2. Whisking the yolks: Beat the egg yolks with the remaining sugar until the mixture pales, increases in volume, and acquires a creamy texture.

  3. Incorporating the mascarpone: Add the mascarpone to the whipped yolks and blend gently until a smooth and homogeneous cream is obtained.

  4. Folding the mixtures: Incorporate the meringue into the mascarpone cream in two or three additions, using folding motions from bottom to top to preserve the air and achieve a light and silky texture.


Raspberry Soak

  1. Crush the raspberries along with a small amount of sugar and the vodka until a fine puree is obtained.

  2. Strain to remove seeds and keep chilled. This will be the liquid to moisten the savoiardi.



Assembly

  1. Lightly moisten the savoiardi in the raspberry coulis (without saturating them).

  2. Place a first layer of ladyfingers at the bottom of the mold.

  3. Cover with a generous layer of mascarpone cream.

  4. Repeat the process, alternating layers of savoiardi and cream until finished, always ending with a layer of cream.


Raspberry Tiramisu Recipe


Finishing and Presentation

  • Refrigerate for a minimum of 4 hours (ideally 8) to achieve structure and harmony of flavors.

  • Before serving, sprinkle with powdered sugar and finish with carefully arranged fresh raspberries.


Chef's Tip

The savoiardi should absorb aroma, not become soaked. A brief contact with the coulis ensures a defined texture and clean layers when sliced.
